Coleslaw
A simple deli-style coleslaw that it slightly sweet (or leave out sweetener if you prefer).
Ingredients
- 1/2 Cabbage, sliced thin
- 2 Carrots peeled and julienned
Dressing
- 3 Tablespoons apple cider vinegar
- 3 Tablespoons sweetener of choice
- 1/2 cup plant-based mayo
- 1/2 teaspoon celery seed
- 1 Tablespoon Kosher salt
- Fresh ground pepper to taste
Mix cabbage and carrots and dressing and refrigerate overnight. Drain off extra liquid as needed and serve up as a side dish for up to a week.
